MMT 2014 Week 12

This week was a little rough. My shins continued to hurt and a lot of treadmill run (and walks) because of the weather. I ordered compression socks so hopefully those will arrive soon and I can try them out. I was sore after the 10 miler so the rest on the the Sunday after was well worth it. Anything new with your running this week?

Papa John's 10 Miler 2014

I PRed again!! Papa John's 10 Miler is complete, and I survived! 

This year's Triple Crown was a success because I PRed in all three races! (Anthem 5K and Rodes City Run 10K




The 10 Miler was a little rough for several reasons: my shins, quads, and hips hurt, as well as running through hilly Iroquois Park. I only ran one other time this week, (on Monday) because I was getting shin splints and I thought I should rest before the race. Even though I did, my shins hurt for the first 4 miles. Afterwards, my quads and hip started to hurt. I ended up stopping to stretch three times during the last couple of miles. I think those hills in Iroquois got to me!

I think coming out of the hills was the worst part, I was struggling the last 3 miles. I sure did push myself. 

So as others racing may have noticed..this race was actually around 10.2 miles, more than 10 miles!! So I'm going according to my GPS watch to tell me what my 10 miles was like :)

8 Month Old Penny

This past week I went home for my Spring Break. That means that I got to see my puppy dog, Penny! She is 8 months already. I thought I would share what's up with the pup!

**NOTE: Most of these pictures are her snuggling...aka one of her favorite activities.

Likes
- Playing at the dog park
- Hiding her bones inside AND outside the house
- Sleeping on her electric blanket, burrowing down 
- Snuggling with anyone
- Chewing on bones (oinkies specifically)

- Stealing socks and eating them too!

MMT 2014 Week 10

Week 10 was at home! I love going home! I got to run with two great running buddies, my Mom and Penny! I took Penny on a 3.5 mile run on Main Street and she did great. Last time I ran with her was back in December when we were in Hilton Head. I wish I could have taken her back with me to Louisville so I could run with her. 

My Mom and I went for an 8 mile run in Southbury. It was perfect weather and I think we did pretty well. My shins were killing me the first 4 miles, so I had to stop several times to stretch. That was my Mom's longest run of the year and she did great! It was hilly, so it wasn't an easy run. While I was home, I also did a couple of strength classes that always kick my butt. I was sore for a couple of days, but I know that's a good thing! Next week is the Papa John's 10 miler...eek!

Chocolate Chocolate Bundt Cake

When I come home I always love to bake. And since it's my Spring Break, I did just that! We went over to a family friends and I wanted to make something that most people would like and was pretty simple to make. So I made a moist chocolate cake. I call it Chocolate Chocolate because it's ALL chocolate! Yum! 


Chocolate Chocolate Bundt Cake 

Ingredients: 
1 box chocolate cake mix
Chocolate instant pudding
4 eggs
1 C sour cream
3/4 C water
3/4 C oil
1 C sour cream 
1/2 bag of chocolate chips 

Directions: 
- Preheat oven to 350 degrees
- Add all ingredients together, mix, and and add to greased bundt pan.
- Bake on 2nd bottom rack for around 45 minutes (give or take)
- Let it cool completely before turning it over onto a platter. Loose cake first, if needed. 
- Drizzle with Hershey's chocolate
- Enjoy :)

Audience of The Chew

Yesterday my Mom and I were in the audience of "The Chew." The Chew is a daytime show on ABC all about cooking. The co-hosts include: Carla Hall, Clinton Kelly, Daphne Oz (Gabrielle Union was subbing for her), Michael Symon, and Mario Batali. It was fun and we got some good ideas for recipes. There was a lot of energy in the room and the hour long taping went by fast.

The episode was called "Did somebody say, pasta?" So they made pasta dishes that looked delicious. Unfortunately, we weren't picked to be the taste testers. I'm not sure if we will even be on TV because of where we were sitting. The show won't air until later March or April.

After the show, we were planning on going to a museum, but instead we went to the Plaza Hotel outside Central Park and eat some lunch. After watching a food show it sure made us hungry....plus we never ate lunch! It was a beautiful day...almost 60 degrees outside. We walked probably almost 4 miles because of walking to and from the car. 

I love Central Park! 
We ate Luke's which is a seafood place. We each had a sampler that included shrimp, crab, and lobster rolls. They were quite delicious. Oh and Diet Coke too!

Chocolate Lasagna

When Nick came to visit me in Louisville last week, I wanted to make a dessert for him. (Yes, I spoil him!) I found this recipe called Chocolate Lasagna. Looked delicious! Nick said he really liked it. 


Adapted from: Center Cut Cook

Ingredients

1package regular Oreo cookies  
6Tablespoon butter, melted
1- 8 ounce package cream cheese, softened
¼cup sugar
2Tablespoons cold milk
1- 12 ounce tub Cool Whip, divided
2- 3.9 ounce packages Chocolate Instant Pudding.
cups cold milk
1and ½ cups mini chocolate chips


Directions




Crush the Oreos, with food processor for this, or placing them in a large ziplock bag and crush them with a rolling pin. When the Oreos have turned into fine crumbs, you are done.

Transfer the Oreo crumbs to a large bowl. Stir in 6 tablespoons melted butter and use a fork to incorporate the butter into the cookie crumbs. When the butter is distributed, transfer the mixture to a 9 x 13 inch baking dish. Press the crumbs into the bottom of the pan. Place the pan in the refrigerator while you work on the additional layers.
Mix the cream cheese with a mixer until light and fluffy. Add in 2 Tablespoons of milk, and sugar, and mix well. Stir in 1 and 1/4 cups Cool Whip. Spread this mixture over the crust. In a bowl, combine chocolate instant pudding with 3 and 1/4 cups cold milk. Whisk for several minutes until the pudding starts to thicken. Use a spatula to spread the mixture over the previous cream cheese layer. Allow the dessert to rest for about 5 minutes so that the pudding can firm up further.
Spread the remaining Cool Whip over the top. Sprinkle mini chocolate chips evenly over the top. Place in the freezer for 1 hour, or the refrigerator for 4 hours before serving.

Rodes City Run 10K

I completed the second leg of the Triple Crown....Rodes City Run 10K. 

I PRed too!!! Even though I have ran a 10K one other time before (like 4 years ago!) I still beat my time by 3 minutes! I really pushed myself. You know you pushed yourself when you have thoughts such as "why do I run again?", "I may throw up" "I can't breathe". But it all ended well and I'm proud of my accomplishment. 


Here's the breakdown...

Final time (according to my Garmin)= 55:18, 8:55 min/mi pace 
- Mile 1= 8:44
- Mile 2= 8:55
- Mile 3= 8:38
- Mile 4= 8:56
- Mile 5 = 9:10
- Mile 6= 9:09
- 0.2 Mile = 1:47 

The route wasn't flat. Lots of small hills, but if you add multiple ones in a race it really makes my pace slower. Sarah and I ran again together. We kept together until around mile 3 and then I slowed down a bit. She beat me by around a minute and half. Overall, it was a fun race. I love the big crowd and running through different parts of Louisville. The route started on E Broadway by the medical campus and then went around Cave Hill Cemetery and back.  The next race is the 10 Miler is two short weeks...eek! I hope I'm ready, and those hills are ready for me ;)

MMT 2014 Week 9


What do you know....we had snow again! Monday school was out and the public schools were out again on Tuesday. This week was not my usual schedule...no class on Monday, no practicum on Tuesday, and Nick came to visit! Although all that was going on, I ran throughout the week. The weather warmed up by Friday and it was so pretty out then! Nick and I went on Bardstown Rd for a stroll and the race as great weather as well.  It was a good week! And I PRed in the 10K!! MMT 2014 Week Eight

We're getting closer! Today is March 1st. That means the mini-marathon is next month!! This week was bad and good. Bad because I didn't run as much as I wanted to (only 3 runs), but good because I ran an awesome 9 miles! 

Today I ran with Sarah (and her boyfriend too) for the weekly group run. It started at Big 4 Bridge and then run to and around Cherokee Park and then back. It was a good run and perfect weather. I was feeling bad at the middle, great in the middle, and then bad at the end. But hey, I finished and my pace was 9:13 min/mi which is good for me. Next Saturday is Rodes City Run 10K. Hopefully I can get some good runs in this week.
