Happy Monday! I have another healthy (paleo) recipe for you! I've been on Pinterest a lot lately (if you haven't already noticed ;) ). Since you don't really eat "carbs" in Paleo I wanted to make something that was like bread and satisfied the need to eat carbs. These muffins turned out delicious! Very simple to make and didn't take much time at all.
Ingredients:
1 cup almond flour
1 tsp baking powder
1 tsp baking soda
1/8 tsp salt (or a good pinch)
1/2 tsp pumpkin pie spice
1 tsp cinnamon
2 eggs
3/4 cup pumpkin
1 mashed banana
1 tsp vanilla extract
3 tbsp maple syrup
chia seeds
Directions:
Preheat Oven to 350 degrees. Mix all ingredients together in a bowl. Pour into sprayed muffin tins (24 mini or 12 regular) and top with chia seeds. Bake for 20-25 minutes. Let cool and enjoy :)
